Fagiolini spaghetti

My amore is a vegetarian for 4 years now and I’m proud of him. When he told me he’s a vegetarian,  I was like oh my God, it’s difficult to be one. Maybe because I grew up eating all the fishes in the sea being born in an archipelago with 7, 200 islands (number of islands keep growing). Italy is a vegetarian friendly country. It’s normal for them to just munch on pomodoro (tomato) cheese, spaghetti… etc.. etc… Yes, I have to agree that Italy has the best cuisine in the world. There are lots of vegetarian in Italy. I am amazed that some kids are even into vegetarian. I am not a meat lover but for sure I will never be a vegetarian since I love seafoods a lot. 😉 My amore is not having a difficulty at all keeping his vegetarian diet. I am not an expert but I wanted to share one of the famous vegetarian recipe my amore loves. To this day, he said, my cooking passed the Italian taste bud already! 😉

Here’s what you need for FAGIOLINI SPAGHETTI.

250 grams of spaghetti boiled in water

The Italian secret in boiling water for the pasta add salt when the water is already boiling and never ever add oil in the water that’s a mortal sin, just salt and water to boil your spaghetti. Another point is if you are expecting a visitor, you have to wait for the visitor to arrive before you put the spaghetti in a boiling water, as for them, spaghetti and pasta are best when served hot.

Olive oil
Fagiolini (we call it baguio beans)
Onions
Tomatoes (you can use either fresh ones, sun dried or the tomato sauce in can. this time I combined the fresh and the the canned tomato)
salt and pepper to taste
parmesan cheese
Chilli (optional)

persil (optional)
cut it according to your preferred size. If you have kids at home you can cut it into smaller pieces

Here’s how

Saute onions in olive oil
after few minutes add the fagiolini and then add the tomatoes.

Add salt and pepper to taste and then persil. You can also add chilli if you like.


when the fagiolini is cooked. put it on top of the spaghetti. Add grated parmesan cheese and it’s ready to eat!

 In Italy, they always put olive oil in spaghetti, pasta, or pizza before eating. You can try it, it’s delicious.

But wait! For my filipino followers, who loves dried fish, you can do this by adding tuyo or malunggay. If you don’t like fagiolini you can go with malunggay leaves or eggplant.

 Just add grated parmesan cheese and then viola! you have fagiolini with tuyo spaghetti! Believe me, this is so yummy! 🙂
